Mom's Easy Minestrone Soup

Yummy and healthy?! Yes please!

Easy Minestrone Soup

1/2 cup butter/margarine
1 (10 oz) pkg. frozen peas, thawed
1 up diced carrots
1 cup diced celery
1/2 to 1 cup diced onions (preference)
1 Tbs. chopped parsley
1 tsp basil
1 (28 oz) can Italian tomatoes (or 1 qt. home canned)
3 (13 3/4 oz) cans chicken broth
1 cup shredded cabbage
1/2 lb. zucchini, sliced
3 (16 oz) cans kidney (or other variety beans)
1/2 cup spaghetti, broken into small pieces
salt
grated Parmesan cheese

In Dutch oven/large pot over medium heat, melt butter/margarine. Cook peas and next 5 ingredients for 10 minutes. Stir in next 6 ingredients. Cook 20 minutes or until spaghetti is tender. Salt to taste. Serve with cheese. Makes 15 cups (8 servings).
